Jams
¨ Best saucepan to use is one with a thick base, to allow for even heat distribution and wide pan to allow for good evaporation
¨ Don’t mow the lawn and make jam at the same time!
¨ Melt the sugar, don’t stir after you see the first bubble
¨ Heat sugar in the oven and add warm sugar to the fruit. (place the sugar in a container and into the oven whilst sterilising your jars)
¨ If a fruit is low in pectin, use lemon juice or rind to increase pectin levels.
Jellies
¨ For quince jelly, ensure you leave it to drain freely without straining it or it may become cloudy.
